Production Details 8 months aging in mixture of barrels and staves. Harvested at 25-26° Balling. Crushed and de-stemmed with cold-soak at 12-15°C for 48 hours. Fermentation 7 days with juice pumped over skins every 4 hours. Malolactic fermentation completed after initial fermentation.
