Production Details All eight varieties are harvested and co-fermented together. Midway through fermentation, high-proof neutral spirit is introduced to arrest fermentation, retain unfermented residual sugar, and raise the alcohol level. Vintage components are aged separately in neutral oak tanks and barrels, then tasted and selected for a multi-vintage blend positioned between ruby and tawny styles. The vines were originally planted at Ink Grade Vineyard and are now organically grown on the winery property in St. Helena.
