Production Details Old-vine Pinot Noir from Sanford & Benedict Vineyard, planted in the 1970s, was hand harvested after the stems had lignified and fermented 100% whole-cluster without destemming in open-top tanks, with hand punch-downs twice daily. After pressing and a short settling that removed only the heavy lees, the wine aged for 20 months in 100% new 350-L François Frères French-oak barrels. It was lightly fined with egg whites and bottled without filtration. The sheet also reports acidity of 5.7 g/L without stating its analytical basis and prints residual sugar as “<0” without a unit; neither observation is proposed as a canonical numeric analytical value.
Tasting Notes Crushed stone, spice, subtle floral aromas, fruit bubble gum and cherry; firm tannins, structure, elegance, balance and a lingering finish.
Food Pairing Seared steak au poivre; roasted portobello mushrooms stuffed with herbed couscous; or a charcuterie board with cured meat, aged cheeses and spicy mustard.
