Production Details Pagani Ranch grapes were hand-harvested, destemmed and crushed, naturally fermented with native yeasts, given full malolactic fermentation on naturally occurring bacteria, and pumped over a floating cap. The wine spent fourteen months in 100% air-dried American oak barrels: 15% new, 5% one-year-old, 5% two-year-old, 50% three-year-old and 25% neutral. Ridge reports minimum-effective sulfur additions of 35 ppm at crush and 94 ppm cumulatively over aging—not a finished-wine sulfites analysis—and pad filtration at bottling.
Tasting Notes Toffee, black cherry, wild herbs, orange zest, raspberry, honeycomb and black tea; coating tannins and balanced acidity.

The vineyard is head-trained without trellis; the sheet reports a 100–150 ft elevation range and a grape yield of 3.5 tons per acre, retained in their original forms rather than converted to single-value canonical elevation or wine-yield measurements.
Tasting Notes Strawberry, guava, fennel, orange zest, briary blackberry, vanilla and toasted oak; bright acidity, coated tannins and a long finish.
