Production Details Fermentation used 50% whole clusters and 50% destemmed-and-crushed fruit. The wine matured for 10 months in neutral Burgundy barrels, and 678 cases were produced. The low-yielding source vineyard was dry-farmed and certified organic.
Tasting Notes Earthy minerality; subtle, crunchy strawberry, raspberry, plum and quince fruit; plush tannins; long, soft finish; fresh and vibrant rather than heavy or intense.
Food Pairing Roast chicken with herbes de Provence; spiced duck with plum sauce; cedar-plank grilled salmon; winter squash with lentils.
