Production Details The importer describes primary fermentation in barrel on the lees, 10 months in French oak using 100% used barrels, secondary fermentation and further aging in bottle, 100% malolactic fermentation, no fining or filtration, and only a very small SO2 addition. The producer independently identifies the traditional-method wine as Brut Nature with no sugar added at disgorgement. The importer page also says “bottled May 2020”; that date is chronologically incompatible with a 2020 Northern Hemisphere harvest and is therefore withheld from bottling_date.

Production Details Yu-ki Estate lies five miles from the Pacific Ocean at 1,000 feet elevation; a half-acre was converted to Chardonnay in 2017 and its first Chardonnay was harvested in 2018. The 2019 wine underwent primary fermentation and lees contact in barrel, aged 10 months in French oak that was 100% used, then received secondary fermentation and additional aging in bottle. It was made by méthode champenoise, with 100% malolactic fermentation, no fining or filtration, extremely low sulfites, and no sugar added at disgorgement. Production was 120 cases of 750 mL bottles.
Tasting Notes Youthful and brilliantly clear; raw honey, candied lemon, subtle dried pineapple, bread yeast, brioche and intense green apple, with a creamy texture and crisp acidity.
Food Pairing Suitable for a variety of foods and also enjoyable by itself.
