Production Details Pinot Noir was picked several weeks earlier than the estate’s other Pinot at 17–18 °Brix, then directly and gently pressed. The juice underwent barrel fermentation and complete malolactic fermentation. The sheet contains an unresolved internal maturation conflict: its narrative says nine months in barrel until bottling, whereas its specification box says six months in 100% neutral French oak. A yeast culture was added for traditional-method secondary fermentation in bottle, followed by a period resting on yeast before disgorgement. Production was 145 cases of 750 mL bottles.
Tasting Notes Pale salmon colour; continuous bubbles; freshly baked brioche, roasted hazelnuts and wet stone; refreshing acidity with fresh fruit, savoury Pinot Noir character and fresh pizza-dough notes.
Food Pairing A wide variety of dishes
