Production Details Hand-harvested, head-trained and spur-pruned fruit; yield reported as 3 tons per acre. Grapes were destemmed and crushed, then underwent uninoculated natural primary fermentation and full natural malolactic fermentation. The wine aged twelve months in 100% air-dried American oak barrels: 19% new, 8% one-year-old, 50% four-year-old and 23% five-plus-year-old. Production included 1% water addition and tartaric acid; sulfur additions were 35 ppm at crush and 150 ppm cumulatively over aging, followed by membrane sterile filtration at bottling.
