Production Details Hand-harvested fruit was fermented with 60% whole clusters in 5-ton open-top fermenters and punched down twice daily. The wine was pressed to complete dryness, transferred to barrel with moderate lees, and matured for 20 months in French oak barrels, 75% new. The finished-wine sheet also reports acidity of 5.5 g/L without specifying the analytical basis; this is retained here rather than entered as unqualified total acidity. Its residual-sugar entry is rendered as “<0” without a usable unit and is therefore not proposed as a numeric residual-sugar fact.
Tasting Notes Elegant and perfumed, with dried hibiscus, alpine strawberry, dark cherry, dried cranberry, earthy sage, high-acid fruit, oak tannins, and firm structure.
