Production Details The wine underwent 100% whole-cluster fermentation and matured for 24 months in 100% new François Frères French-oak 350 L barrels. Fruit was picked after stem lignification, which the producer says usually occurs between 23 and 24 °Brix. The sheet describes two years of bottle age before the stem-derived tannin became harmonious with the barrel and fruit components. Its analytical panel prints residual sugar as “<0” without a unit; because that expression is anomalous and not an exact usable measurement, no residual_sugar_gl claim is proposed.
Tasting Notes Hibiscus, lavender, plum juice, cola, flint, tobacco, cherry wood and toasted pecans, with muscular structure and a deep texture expected to gain finesse with age.
