Production Details This was Au Bon Climat's first Chardonnay from Spanish Springs Vineyard, located less than two miles from the Pacific Ocean. Harvested September 18, 2024, the wine was aged for 18 months in François Frères French oak barrels, 75% new. The sheet separately reports “acidity: 7.1 g/L” without specifying its analytical basis and prints residual sugar as “<0” without a unit; those two entries are retained here but not normalized into analytical fields.
Tasting Notes Orange zest, pine tar, jasmine tea, walnut, lemon meringue, fresh canelés with grapefruit custard, supple texture, bright acidity, saline character, freshness and precision.
Food Pairing Seared scallops, lobster, grilled halibut, roast chicken with herbs, crab, creamy risotto, or pasta with lemon, brown butter and Parmesan.
