Production Details Rancho La Cuna is an approximately 15-acre vineyard with vines on steep hillsides. The Pinot Noir was hand-picked and processed soon after harvest; the grapes arrived cool, underwent a slow, cool fermentation, and were manually punched down at least twice daily. After fermentation, the wine matured for 18 months in 50% new François Frères French 350 L oak barrels and was bottled without filtration. The sheet reports “Acidity: 5.3 g/L” without specifying the analytical basis and renders residual sugar as “<0” without a usable unit or threshold.
Tasting Notes Eucalyptus, cherry, dark chocolate, espresso, herbal tea, dark currant and blackberry compote; soft oak-driven tannins, firm acidity and a long refined finish
Food Pairing Herb-crusted lamb; duck with cherry sauce; roast pork tenderloin; mushroom risotto; roasted root vegetables; aged Gruyère or Comté
