Fermentation lasted 11 days; the wine was pressed before dryness into neutral oak barrels, where malolactic fermentation completed, and was aged for five months before bottling unfined and unfiltered. The head-trained, dry-farmed block is described as 35+ years old at 900 ft, with a vineyard yield of 2 tons/acre. The producer states the ranch has been Certified Organic since inception, but names no certifying body.

Bottling Date 9 Jun 2017
Production Details A 2.9-ton lot was hand-harvested and sorted, foot-trodden, and fermented in T-bins with 30% whole clusters. It received one pump-over daily during a 14-day fermentation, then spent nine months in stainless steel and was racked one month before bottling. Production was 174 cases and vineyard yield was 1.5 tons/acre. The vines were head-trained and organically dry-farmed. The sheet contains an unresolved planting-date conflict: its site section says the Valdiguié was planted in 1945, while its notes refer to a single Napa Gamay block planted in 1942; therefore no vine-age claim is emitted. Its vintage-specific vinification specifies stainless-steel maturation, while broader notes mention raising the wine in steel and neutral oak, so no settled oak-aging claim is emitted.
Tasting Notes Aromas of black raspberry, cranberry pastille and juniper raspberry liqueur; flavors of charcoal and hibiscus.
Food Pairing Thanksgiving dishes; charcuterie; paella
