Production Details Dusi Ranch fruit was hand-harvested, destemmed and crushed. The still-sweet free-run wine was drawn off and press wine was added back, increasing sugar sufficiently to stop fermentation naturally. The wine matured for eleven months in 100% air-dried American oak barrels: 60% one- and two-year-old and 40% four-year-old. Vineyard yield was 2.5 tons per acre. Sulfur use was reported as 35 ppm at crush and 123 ppm cumulatively over aging; these are process additions, not finished-wine sulfite analysis. The finished wine had 12.0% residual sugar by weight and was bottled only in 375 mL format.
Tasting Notes EB (June 2019): deep garnet; dried cherry, candied plum, barrel spice, black cherry and stony earth; full-bodied and fresh, with a long sweet finish.
