Production Details The producer PDF specifies 100% skin maceration for ten days, with the ripest vines at the hilltop destemmed and crushed, fermented dry, pressed into neutral oak, matured for 18 months, then held for another year in bottle; production was 242 cases. The current producer page for the same 2022 release instead describes two lots: riper fruit fermented on skins in tank and less-ripe fruit whole-cluster direct-pressed and fermented in neutral barrels, followed by blending to taste. Both sources describe organic farming and native yeast, but their accounts conflict over whether all fruit or only one lot received skin contact.
Tasting Notes Spiced tropical fruit; dates, figs and papaya; tarragon and chervil; salty, textured, broad and powerful
Food Pairing Grilled vegetables, especially tomatoes or mushrooms; wood-oven-roasted fish; Chinese stir-fry; stuffed cabbage rolls
