Production Details Estate-grown fruit from older, organically farmed Cressida Vineyard vines was divided by hillside position: the riper top was harvested one week before the bottom, and the components were recombined when the second lot was pressed. Three small tanks were used—one destemmed, one with 50% whole clusters and one with 100% whole clusters—with two manual punch-downs daily. Pressing occurred after approximately 14 days on the skins. The wine was aged in neutral puncheons alongside two new Boutes French-oak barrels; no maturation duration is stated. Production was 268 cases.
