Production Details A dry sparkling red made in a traditional Lambrusco style. The wine was barrel-aged for mellowness and completeness, then bottled by méthode champenoise for secondary fermentation and natural carbonation; the producer notes possible slight cloudiness from natural yeast. Primary fermentation used only native yeasts, with no fining or filtration. Windmill is a certified-organic vineyard farmed by Sergio Villanueva for owner Jeff Morgan under Matthiasson's direction. Production was 256 cases.
