Oak Types Air-dried American oak

Production Details Sustainably farmed, hand-harvested grapes were destemmed and crushed, fermented with native yeast, put through full natural malolactic fermentation, and matured twelve months in air-dried American oak: 15% new and 85% one- to four-year-old barrels. A 1.4% water addition was made. Sulfur additions were 35 ppm at crush and 173 ppm during aging, representing process additions rather than finished-wine sulfites. The wine was pad filtered. Ridge's page is internally inconsistent about extraction: its history text says once-daily pump-overs and pressing after eight days, while the dedicated winemaking specification says twice-daily pump-overs and pressing at ten days; no maceration-days claim is therefore proposed.
Tasting Notes Jammy blackberry and cassis with pepper, mint and tobacco; full-bodied, with black cherry, coated tannins and a long layered finish.
