Production Details The grapes were dried on straw mats before fermentation and air-dried for 30 days after the September 4 harvest. The wine matured for 34 months in new French-oak barrels and was bottled only in 375 mL bottles. Walker Wine Co. reports acidity of 7.1 g/L without identifying its analytical basis, and residual sugar of 25.5% rather than g/L; these measurements therefore are not proposed as total_acidity_gl or residual_sugar_gl.
