Production Details Each variety was handled separately; the fruit was hand harvested and whole-cluster pressed, with primary and malolactic fermentation completed in barrel. The wine then received 16 months of barrel maturation in 100% new François Frères French oak. The sheet reports acidity of 6.1 g/L without identifying its analytical acid-equivalent basis and prints residual sugar as “<0” without a usable unit or threshold, so neither figure is proposed as a canonical analytical value.
