Production Details Grapes intended for Maggy Hawk’s still White Pinot Noir were used. At the desired sugar level, the tank was chilled to pause fermentation; the partially fermented juice was then hand-bottled so fermentation could finish in bottle and trap carbon dioxide. The producer’s aging entry specifies 100% stainless steel and fermentation halted mid-course to retain sweetness. Production was 46 cases.
