Production Details Skycrest rises from 1,500 to 2,000 feet above sea level and is steep in many sections. The grapes were harvested at night and arrived cold; the intact fruit bypassed sorting. The bins were foot-tread, and the juice remained with the skins for 2–4 hours before pressing to tank and settling overnight. The juice was then racked to barrels, where ambient yeast and bacteria naturally conducted primary and malolactic fermentation. Individual barrels aged untouched, without stirring, for 16 months. Maturation used 25% new French and Austrian oak barrels and puncheons. The wine was blended to tank before its February 2024 bottling; production was 355 cases.
Tasting Notes Lemon shortbread, spiced pear, sea salt, tarragon, lily of the valley, white pepper and cardamom; gentle entry, electric acidity, medium-weight center and a persistent graceful finish
