Production Details Fruit was hand-picked during the cool early morning. Vineyard sections were monitored and fermented separately where appropriate, with both fully destemmed and stem-inclusion/whole-cluster lots. The fruit received a five-day cold soak; skin contact during alcoholic fermentation was approximately 14 days but varied by lot, with pump-overs for cap management. The wine was gently pressed, the free-run and hard-press fractions were separated, and malolactic fermentation proceeded in barrel without bacterial inoculation. It matured for 16 months in French oak: 15% new and 35% once-used, with the remaining oak proportion unspecified. Production was 86 cases. The sheet also reports 'TA 5.6' but supplies neither a unit nor an acid-equivalent basis, so it is not proposed as total_acidity_gl.
Tasting Notes Fresh blueberry, black plum and cherry layered over potting soil, black tea, violets, lavender, warm clove-nutmeg spice and thyme; firm acid and tannin at entry, a plush weighty mid-palate, dark-fruit and floral breadth, medium-plus tannins and a long, steady, seamless finish
