Fermented in stainless steel using an old-fashioned method that retained a few grams of sugar for refermentation in bottle; malolactic fermentation also occurred in bottle. The wine spent 6 months in stainless steel and was bottled in March 2025. Production was 40,000 one-litre bottles.
