Production Details Hand-picked grapes were pressed very slowly and fermented in stainless-steel tanks for 10 months. After several months of natural settling and clarification, the wine underwent a second fermentation in bottle by the traditional method. The producer's ageing-vessel field states stainless steel. Additional analyses: dry extract 19.30 g/dm³; volatile acidity 0.37 g/dm³, with acid-equivalent basis unspecified; total SO₂ 106 mg/dm³; free SO₂ at bottling 31 mg/dm³; volumetric mass 0.9900 g/cm³.

Production Details A trade-vendor historical account identifies Espumante OLO 2013 and says the sparkling project began by retaining part of OLO in a small tank rather than bottling it, then bottling it the following January to produce sparkling wine by the traditional Champagne method; the experiment was repeated the next year.
