Production Details Grapes from a group of Lima Valley vineyards were handpicked into small boxes and transported rapidly to the winery under refrigeration. The Portuguese section specifies pressing whole destemmed grapes, while the English section additionally specifies total destemming and a short skin maceration. Cold clarification lasted 48–72 hours, followed by fermentation at controlled rate and temperature and at least three months on fine lees with regular bâtonnage. Recommended serving temperature is 11–13°C.
