Production Details Ruby Dum comes from low-yielding Cima Corgo vineyards, including vines over 30 years old, with vineyard density listed as 4,000 per hectare and Royat and Guyot training. The fruit is hand-picked in September/October and predominantly foot-trodden in lagares. The wine ages in large wooden vats at Niepoort's Gaia lodges and is bottled with an average age of three years; this average duration is not converted to exact aging days. Format-specific supplementary analyses are: 0.75 L—dry extract 127.70 g/L, Baumé 3.60, volatile acidity 0.20 g/L and density 1.0200 g/cm³; 0.375 L—dry extract 127.50 g/L, Baumé 3.60, volatile acidity 0.20 g/L and density 1.0230 g/cm³.
