Production Details The grapes are hand-picked at optimum ripeness, destemmed and crushed, then carefully macerated with constant churning during fermentation in stainless-steel vats at 28–30°C until the desired Baumé is reached; grape brandy is then added to fortify the wine. Fine Ruby blends wines from different harvests with different maturation levels in stainless steel and wood for a minimum of three years. Vineyard rows are traditionally planted on horizontal terraces, with more recent vinha ao alto plantings, at elevations stated as up to 600 m. The Norwegian importer sheet for SKU 28101 instead describes three years in barrels. Serving recommendations also conflict: the producer sheet says 12–14°C, the Norwegian importer says 10–12°C, and the current Kopke Group US shop says 16–18°C; consequently no single serving_temp_c value is proposed.
Tasting Notes Deep ruby with a garnet rim; a classic bouquet balancing lively young fruit; firm and powerful, with fresh-fruit flavours and a long, harmonious finish. The Norwegian importer additionally describes cherry, ripe blackcurrant, liquorice and cinnamon.
Food Pairing Strawberry-and-yoghurt mousse, red-berry clafoutis, or Camembert millefeuille with raspberries and rosemary; the Norwegian importer also recommends it as an aperitif and with desserts, cheese—particularly Roquefort or Stilton—and dark chocolate.
