Production Details The grapes are hand-picked at optimum ripeness, destemmed and crushed. Careful maceration and continuous agitation during fermentation extract colour, tannins and aromas. Fermentation proceeds at 28–30°C until the desired Baumé is reached, after which grape brandy is added to fortify the wine. The finished wine blends wines from different harvests and of different ages. Vineyards include horizontal terraces and vinha ao alto plantings and reach up to 600 metres; the recommended serving range is 12–14°C.
