Production Details The grapes are hand-picked, destemmed and crushed, then carefully macerated with constant churning and fermented in lagares at 28–30°C until the target sweetness is reached, when grape brandy is added to stop fermentation. Wines from different harvests mature for varied periods in oak casks and are blended so that their average age defines the 10-year label indication. The producer describes horizontal terraces and newer vinha-ao-alto plantings at elevations up to 600 m and recommends serving at 12–14°C. The distributor specification additionally states 24–36 hours of skin contact, fermentation to approximately 6% alcohol before fortification with 77% grape spirit, and a minimum average of 10 years in large casks before bottling.
