Production Details Hand-picked grapes are destemmed and crushed; careful maceration with constant churning accompanies fermentation in lagares at 28–30°C until the target Baumé is reached, when grape brandy is added to stop fermentation and create the fortified wine. Wines from different harvests mature for varied periods in oak casks and are blended so their average age defines the 20-year label. The vineyard information gives an upper elevation bound of 600 metres. Serving guidance conflicts: the principal Kopke page and November 2016 producer sheet recommend 12–14°C, while the current Kopke Group US shop states 14–16°C.
