Production Details Hand-picked grapes are destemmed and crushed, then undergo careful maceration with constant churning during fermentation in lagares at 28–30°C until the desired Baumé is reached; grape brandy is then added to produce the fortified wine. The finished wine blends different harvests whose components matured in oak casks for varying periods, and their average age defines the 30-year indication. Vineyard elevation is stated only as up to 600 m. Recommended serving temperature is 12–14°C. Store upright in a cool, dry, dark place; once opened, consume within 4–6 months.
Tasting Notes Amber with green hues; intense, complex aromas led by dried fruit with vanilla and honey; harmonious, concentrated and unctuous palate; enduring finish
Food Pairing Foie gras with aubergine and walnuts; toffee brownies; chocolate and pistachio pavé; or walnut crostini with chèvre
Critics Ratings Robert Parker: 93 points (2016)
