Production Details Grapes are hand-picked at optimum ripeness, destemmed and crushed, then undergo careful maceration with constant churning during fermentation in lagares at 28–30°C until the intended Baumé is reached; grape brandy is then added to fortify the wine. Wines from different harvests are blended after maturing in oak casks for varied periods, and their average age defines the 40-year label. Vineyard elevation reaches up to 600 metres. Recommended serving temperature is 12–14°C.
