Production Details 2019 limited release: fermentation in stainless-steel vats with the grapes macerated and churned with their skins at controlled temperature, followed by fortification with grape brandy. The producer describes a blend of very old and rare wines from the previous century. Its product page says the blend was cask-aged for at least 50 years, while the linked technical sheet describes approximately 50 years in 300-litre barrels. The release comprised 350 numbered bottles. Vineyard rows are planted both on horizontal terraces and, more recently, vertically up the slope; vineyard elevation is stated only as up to 600 metres. Recommended serving temperature is 8–10°C.
Tasting Notes 2019 limited release: vibrant yellow with a broad golden rim; intense and complex spice, dried fruit, yellow stone fruit and citrus aromas; dense, concentrated and slightly dry, with rich, velvety flavours and a fine, delicate finish.
Food Pairing 2019 limited release: shrimp tempura, sea-bass tartare, scallops au gratin, foie gras, moderately sweet desserts such as almond tart or apple crumble, and blue cheese.
