Production Details Each variety is picked at its ideal ripeness, and fermentations from each variety and vineyard block are kept separate until later assessment and blending. After leaving the Malvedos winery in the spring following harvest, the wines typically mature for one to two years in seasoned wooden barrels or vats at Graham's Vila Nova de Gaia lodge before incorporation into the Six Grapes bottling lot. Blends are matched closely to preceding lots, and no further bottle ageing is required. The 2021 producer specification records Baumé 3.6 and recommends serving at 12–16°C, storing upright and consuming within 6–8 weeks after opening. The current Fells NV presentation summarizes its marketed bottling as aged for two years in seasoned casks.
Tasting Notes Dark red; rich aromas of ripe plums and cherries; complex and well structured on the palate, with a long, lingering finish.
Food Pairing Dark-chocolate-based desserts or mature cheeses.
