Production Details The three varieties were harvested and fermented separately. Fermentation lasted 21 days, involved 100% of the wine in French-oak barrels, 50% new, and used cultured yeasts. After alcoholic fermentation, the wine remained in barrel for four months with bâtonnage while partial malolactic fermentation was completed.
