Production Details Hand-picked fruit from organically farmed Quinta de Nápoles vineyards (Royat-trained, 4,000 vines/ha, 100–360 m elevation) was meticulously sorted and fermented spontaneously at low temperature with 50% stems for about one month. After alcoholic fermentation, the wine was pressed into stainless steel for malolactic fermentation and four months of maturation, then transferred after winter to a 5,000 L old wooden vat previously used for Port for a further 12 months. Additional producer fields report dry extract 21.10, volatile acidity 0.50, free SO2 15 and density 0.9913 without displaying their units in the JSON response; energy is listed as 67 kcal/280 kJ without an explicit population basis and is therefore not mapped to calories per 100 ml.

Production Details This was the second Bioma Tinto edition. Manually harvested fruit from Royat-trained Quinta de Nápoles vineyards (4,000 vines/ha, 100–360 m elevation) was fermented in truncated-conical stainless-steel vats with 20% stems and 25 days' total maceration. The wine matured for 12 months in a used 5,000 L wooden vat recovered from Port-wine use; malolactic fermentation was partially completed.
