Production Details Hand-picked fruit from Royat-trained vineyards at 150–250 m and 6,000 vines/ha. Vinification used around 30% whole clusters, controlled-temperature fermentation and approximately two weeks of maceration. Malolactic fermentation occurred in oak barrels, followed by 22 months of barrel ageing. The finished wine had dry extract of 25.50 g/L, volatile acidity of 0.70 g/L, total SO₂ of 103 mg/L, free SO₂ at bottling of 22 mg/L and carbohydrates of 0.9 g/100 mL.
