Production Details For the principal 75-cl release, old-vine Moscatel from schist-and-granite sites at 400–500 m was harvested manually in September and fermented in lagares. The multi-wine, 20-year age-category blend underwent long maturation in old 550-L wooden pipas and new French barriques and was bottled in June 2021. The structured analysis also records dry extract 212.80, Baumé 7.90, volatile acidity 0.80, density 1.0550 and total SO2 68, but the API does not expose units for those entries, so they are not promoted to unqualified canonical numeric fields.
Tasting Notes Apricot, lemon, almond and other nuts, marzipan and curry spice; an extremely long palate with an almost piquant texture, structure and fresh acidity.
Food Pairing Ham, cheesecake, and fruit tart with orange.
