Production Details Hand-picked fruit from gobelet-trained vines planted at 3,000 vines/ha; biodynamically farmed without herbicides. Fermented under controlled temperatures and underwent malolactic fermentation in granite tanks, followed by four years of wooden-vessel maturation and a further two years in bottle. The producer record contains differing vessel wording: its ageing field says a large wooden vat, while its vinification text says old wooden barrels. Bottled in June 2020.
Tasting Notes Pineapple, apricot, citrus, subtle smoke, integrated wood and vanilla; elegant and firmly structured, with saline, spicy, fresh and lingering characteristics.
Food Pairing Cod and other oily fish
