Production Details Hand-picked fruit came from Guyot-pruned vineyards planted at 2,500 vines/ha; stated vine-age and elevation ranges were 40–60 years and 80–100 m. Fermentation lasted four weeks in stainless steel before completion in used 2,500 L vats; malolactic conversion and 22 months of maturation occurred in the same vats. Other reported analyses were dry extract 21.9 g/L, volatile acidity 0.62 g/L and volumic mass 0.99 g/cm³.
Tasting Notes Lively, bright appearance with violet glints; red fruit, cherries, red berries, floral notes and spice; elegant structure, concentration and freshness with a long, persistent finish.
Food Pairing Venison including partridge and wild boar; pork-and-bean stew; baked cod; vegetarian legume dishes including red kidney beans and lentils.
