Production Details Current NV specification: fruit is hand-picked at an average 18.5–20.5 Brix; after whole-bunch pressing, the juice settles for 48 hours and is racked off the solid lees. Following stainless-steel fermentation and malolactic conversion, the lees are stirred to build texture. Blending occurs in September, with some base wine retained for future reserve wine; a proportion of older reserve wine is added in October. After stabilisation, the wine spends a minimum of 24 months en tirage. It is disgorged and receives a small, unquantified dosage. The producer recommends serving at 8–10°C.
Tasting Notes Pale straw; crisp and balanced, with ripe citrus, apple, lemon and fresh-bread aromas; a toasty, creamy and complex palate with a lingering nutty finish
Food Pairing Aperitif; fresh simple hors d'oeuvres; oysters, clams, scallops, raw vegetables and fresh new-season asparagus
