Production Details Individual vineyard parcels were destemmed for fermentation, left on skins for extended maceration and then pressed. The wine matured for 12 months in a mixture of new and seasoned French oak barrels, with regular topping and racking, before traditional egg-white fining and bottling. Residual sugar at bottling was reported qualitatively as dry.
Tasting Notes Brilliant crimson with a vibrant purple hue; raspberry coulis, boysenberry, blackberry syrup, violets, pink peppercorn, cinnamon, char, vanilla and lingering spice; medium-bodied with dense fruit, creamy dark-chocolate-like tannins, balanced acidity and a long finish.
Food Pairing Red meats; savoury and lightly spiced Mediterranean dishes; soft cheeses.
