Production Details Hand-picked fruit was entirely destemmed, given an approximately eight-day cold soak, naturally fermented in small open tanks and basket-pressed, with 27 total days on skins. The wine was blended in stainless steel, underwent malolactic fermentation, and matured for 15 months in old French-oak barrels with no new oak. The sources report only a small sulfur addition before bottling: Great Little Vineyards gives less than 15 mg/L, while the Japanese listing gives 10 ppm; both describe an addition amount rather than total finished-wine sulfites. The wine then received at least 12 months of bottle maturation and was released unfined and unfiltered.
Tasting Notes James Suckling: flowers, black pepper, cloves, orange peel, wet earth, a solid fruit core, granite and slate notes, and a very long finish.

Production Details The estate vineyard was planted biodynamically at 5,600 vines/ha and lies at 295–345 m elevation. Alyssum was entirely destemmed, wild-fermented with 26 days on skins, and matured for 15 months in old barrels. No additions were reported except 10 ppm sulfur at bottling; this is an addition amount, not an analysis of total finished-wine sulfites.
