Production Details Fruit was hand-picked from organically managed Red Shed and Defiance vineyards, where no pesticides, herbicides, systemic fungicides or inorganic fertilisers were used. The grapes were destemmed and foot-crushed, fermented naturally, and retained on skins for 29–36 days before basket pressing. The wine underwent malolactic fermentation and matured for 14 months in French oak barrels. Less than 15 mg of sulphites was added before bottling; the source does not clearly state the concentration denominator.
