2007 Technical Specifications

Region Central Otago
Sites Zebra Vineyard, Bendigo, Central Otago
Indigenous Yeast Yes
Production Details At the November 2007 winery tasting, the unfinished wine had been made from hand-picked, destemmed fruit without a cold soak; fermentation used indigenous yeasts and the cap was punched down. A separate contemporary account identifies 2007 as the inaugural vintage and states that the vineyard was planted in 2003.
Tasting Notes November 2007 unfinished-wine tasting by Jamie Goode: pure dark fruit with a savory, brooding character; rich but reasonably restrained. October 2009 bottle review by Alder Yarrow: cherry, wet wood, wet earth and herbal aromas, with sour cherry and plum flavors, bright acidity, a juicy texture and a tart finish.
Food Pairing Crispy Peking duck
