Production Details The vintage Barbaresco marc is distilled in an indirectly fired copper still using a discontinuous steam method, then aged in wood for about ten years. Production is only a few hundred bottles per vintage, and the exact total is printed on the label. For the 2005 bottling, Lebendige Weine further reports fresh marc from Crichet Pajè, Pajè, Asili and Montefico, gently and slowly double-distilled in a steam-operated discontinuous still.
Tasting Notes Ignazio Amante, 31 January 2017: pure and subtle fragrance, ripe cherry, wood-barrel spice, lively acidity, very full body, tannic structure and a very long finish.
