Production Details The source grapes are hand-harvested, sorted before and after destemming, and vinified separately by variety and parcel; their first fermentation lasts one week in stainless-steel vats, after which the marc is transferred promptly to the distillery. The pomace is distilled in small copper stills. The grappa matures for at least three years in estate-owned barrels; the importer describes 36 months in new barrels. It is then blended with reserves from earlier vintages for greater breadth and character. Distillation, blending and bottling occur at the same artisan distillery. The importer recommends serving it slightly chilled after meals.
