Production Details Nebbiolo pomace dripping with wine is distilled in a discontinuous stainless-steel still, with steam carrying the alcoholic vapours into a distillation column. The archived sheet further specifies immediate distillation of fresh pomace after fermentation, slow distillation at lower alcoholic strength, and separation of the heads and tails to retain the heart. The initial distillate is 70–75% alcohol; this is an intermediate distillate measurement, not the finished strength. The grappa is refined in small 225 L barrels made from acacia, juniper, oak and birch. The archived sheet specifies one year in wood, followed by addition of distilled water to reach label strength. Distillation takes place in October.
Tasting Notes Golden colour; aromas of mushrooms, hazelnuts, hay or straw, grapes, raisins and blackberries, with camphor and bitter or bittersweet chocolate; balanced and elegant on the palate.
