Production Details The pomace comes from Nebbiolo grown in the Sperss vineyard at Serralunga. Immediately after fermentation, the fresh pomace is slowly distilled at relatively low alcohol strength in a stainless-steel alembic. It is heated progressively, and the heads and tails are cautiously separated to retain the heart. The initial distillate is 70–75° alcohol; distilled water is added before bottling to reach the stated 45% label strength. Maturation is reported inconsistently: the linked NV fact sheet states 24 months in barriques, while the current importer wine page states 30 months in oak; the duration therefore remains an explicit source conflict.
